Who doesn’t love the combination of well-seasoned beef mixed with vegetables???
Today I propose you a healthy twist on taco's recipes!
Together with tomatoes and lime, minced meat is stuffed into an avocado, together with avocado's own pulp.
This makes this dish perfect for a lunch, or even a light dinner.
It comes together super quick and easy too.
Of course, it can be completely customized. Although I highly recommend that you follow the instructions, so that you won’t feel overly full from nutrients. Instead, you’ll be satisfied from the healthy fats and nutrients from the avocado and beef...and you will be ready to enjoy the rest of the summer!
500 g lean minced beef
2 beefsteak tomatoes
2 ripe avocados
1 lime fruit juice
salt and pepper
EVO oil
- Prepare your tomatoes: pour 1 l of water in a large pot and bring to boil. As soon as the water boils, add salt and the tomatoes. Let them cook for about 5 minutes
- Remove the tomatoes from the heat and drop them into an ice-water bath for an immediate cool down. Drain the tomatoes and peel them
- Then, cut them by half and dice them with a knife. Place them in a colander to drain
- Put a pan over a medium heat, pour 2 tablespoons of EVO oil and leave it for 1 minute until hot. Add the minced meat and break it up with your spoon or spatula. Keep stirring for at least 5 minutes, until all the mince is in uniform, mince-sized lumps and there are no more pink bits. Make sure you keep the heat hot enough for the meat to fry and become brown, rather than just stew.
Then, switch off the heat, add salt and pepper and keep aside - Slice the avocados in half, remove the pit, use a spoon to scoop out all the avocado pulp to create a crater. Place the pulp in a large bowl and the avocado shells in the fridge
- Smash the avocado pulp with he fork until you obtain a cream
- Add the minced meat, diced tomatoes, the lime juice, salt and pepper. Stir very well
- Take the avocado shells from the fridge and load them up with the minced meat and avocado mixture. Enjoy!!!
