Fried breaded artichokes

Although I like almost every vegetable you could think of, I have to admit that spring vegetables such as artichokes, asparagus, fava beans are my favourites.

Artichokes may look scary for many as they do require some preparation before you can cook them. But, after you have cleaned a couple of artichokes, you will realize that even if the process is rather time consuming, it is easy. While you clean your artichokes, sprinkle them with lemon juice, so they do not turn brown.

You may prepare a sauce to dip your fried artichokes in, or simply eat them as they are: they are tasty on their own!


Here's what you will need for the 4-serving recipe:


6 raw artichokes hearts
1 lemon
1 egg
100 g flour 00
100 g breadcrumbs
100 g Parmesan cheese
1 l seed oil
salt and pepper

  1. Cut the artichoke hearts into thin slices and sprinkle with lemon juice
  2. After 30 minutes, wash them to remove the lemon, and drain them well
  3. Beat the egg in a small bowl. Add salt and freshly ground pepper, and keep aside
  4. In a plate mix the breadcrumbs with the Parmesan cheese
  5. Take each artichoke's slice and first roll in flour, then dip into the egg, and finally roll in breadcrumbs
  6. Heat the seed oil in a heavy saucepan to 180°C
  7. Deep fry 3 or 4 artichokes at a time until crisp and golden brown (about 3 minutes). Then, use a slotted spoon to remove from the oil, and place on a tray covered in paper towels...serve super hot!
