Pasta with braised artichokes and Pecorino cheese

This tastylicious artichoke pasta dish with sharp pecorino cheese is the perfect weeknight retreat. Comforting, creamy carbs to the rescue!

It is a simple and easy Italian dish. Pasta is tossed along with a smooth and healthy artichokes dip...with flavourful cheese.
Fork some maccheroni and kick your hunger to the curb!


Here's what you will need for the 4-serving recipe:
 


320 g Calamarata pasta
6 raw artichokes hearts
100 g Pecorino cheese
1 lemon
EVO oil
salt and pepper

 

  1. Cut the artichoke hearts into thin slices and sprinkle with lemon juice
  2. Grate Pecorino cheese
  3. Braise artichoke slices with 2 tablespoons of EVO oil and salt; cook gently perfuming with a pinch of pepper for about 10 minutes, until they become soft and golden
  4. Boil pasta in salted water and drain al dente
  5. Pan-fry for a few moments the pasta with artichokes
  6. Serve hot with 1 generous spoon of Pecorino cheese on top and freshly ground pepper
