Mimosa risotto with truffle in Parmesan cheese bowl

Mimosa time



Another Friday, another risotto.
Maybe because it is the end of a busy working week and slowly stirring hot broth into creamy white rice soothes the soul.
Or maybe because - once you master the basics of risotto - the combinations are only limited by your imagination.

This risotto recipe may take some time to prepare but the finished dish will be well worth the effort: crispy Parmesan cheese bowl containing warm truffle risotto, whose taste is made even smoother by some raw yolk.
Egg mimosa, made of hard-boiled egg yolk, completes the dish, delighting your guests sight...as well as each morsel will comfort their taste buds!



Here's what you will need for the 4-serving recipe:
 


320 g Carnaroli rice 
1 clove garlic
1 l vegetable broth
150 g grated Parmesan cheese
1 hard-boiled egg yolk
1 egg yolk
30 g butter
EVO oil
truffle oil
salt and pepper


  1. Prepare the Parmesan cheese bowls: preheat oven to 180°C and line a baking sheet with parchment paper
  2. Divide the cheese into 4 portions, and form each portion into an even 15-cm circles on the parchment paper
  3. Bake for about 5 minutes, until the cheese is melted and golden. Then, remove from the oven and quickly use a spatula to lift each Parmesan disk off the tray
  4. Flip over 4 soup bowls (bottoms facing up) and place each disk over the bowls. Gently press around the sides to form bowl-like shapes and allow to cool.
  5. Braise the garlic clove with 2 tablespoons of EVO oil until golden, then pour the rice into the pan and let it toast for 1 minute
  6. Remove the garlic and cook the rice, adding a spoonful of boiling vegetable broth at a time, as for a normal risotto (please refer to the cooking time indicated on the rice package)
  7. A few moments before the rice is done, stir in the butter and the raw egg yolk. Add freshly ground pepper and 1 teaspoon of truffle oil
  8. Crush the hard boiled egg yolk by using a potato masher to obtain a mimosa effect
  9. Serve risotto in the Parmesan cheese bowl with egg mimosa on top
