Pizza bianca bites with caprino cheese, herbs and smoked trout

Many cheese finger foods only take a few minutes to make. They look great and require no utensils or heavy plates.

Today we will prepare a scrumptious appetizer, so easy to prepare you won't believe its astonishing result: pizza bianca with caprino cheese, herbs and smoked trout...will take you to finger-food Heaven!



Here's what you will need for the 4-serving recipe:


400 g fresh pizza bianca (or toasted sliced bread)
100 g smoked trout
100 g caprino cheese
1 orange zest
1 sprig thyme
5 sage leaves
cow milk
salt and pepper


  1. Wash and chop finely all the herbs
  2. Place the caprino cheese in a blender, add the herbs, a pinch of salt, freshly ground pepper and blend for few seconds. Add some milk to soften the mixture whether necessary
  3. Cut pizza into squares about 5 cm on each side
  4. At last, prepare the pizza bianca bites: on each piece spread 1 tablespoon of caprino cheese and one piece of smoked trout. Sprinkle with some orange zest and bring to the table!
