Green beans and rocket salad with walnuts, Feta cheese and honey flavored pears

There are many mothers who are looking for solutions and ideas to make their children to eat and enjoy vegetables. In some cases they employ little tricks, like finely chopping vegetables or hiding them in the meatballs, but we can not always mask these blessed vegetables! It is our mission to discover and spread tempting recipes to make them approaching the world of vegetables and fruit. 

Especially because, if you have a boyfriend or a husband, you experience exactly the same problem. Everyday, over and over.


Today we will prepare a delicious salad of crunchy green beans and rocket, made super appealing by the presence of crispy walnuts and honey-flavored slices of pears. Grated Feta cheese will complete the ensemble, balancing fruit sweetness with its umami taste.
As Tuesdays tradition demands, we will be ready in just 10 minutes.


Here are ingredients for the 4-serving recipe:

 

150 g green beans
50 g of rocket
2 ripe pears
50 g of walnuts
100 g Feta cheese
2 teaspoons Dijon mustard with seeds
1 tablespoon balsamic vinegar
1 tablespoon honey
EVO oil
salt and pepper

  1. Cut green beans' ends off with a knife and wash them. Let them boil in salted water for 5 minutes and drain them when they are still crunchy
  2. Put green beans in a bowl with rocket salad. Add the chopped walnuts, too
  3. Grate Feta cheese with a large blade grater
  4. Prepare the dressing: in a bowl mix mustard with balsamic vinegar, salt and pepper, 1 tablespoon of EVO oil and whisk until you obtain a smooth mixture
  5. Peel the pears and cut them into slices about 1-cm thick. Melt the honey with some water in a small pan and, when it is liquefied, add pears. Make them to brown on both sides and set aside
  6. Pour pears into the salad, season everything with the dressing and mix well. Serve with grated Feta cheese on top
