Grilled salmon with chili peppers, fennel à la julienne and avocado puree

Our first proposal is a grilled salmon fillet seasoned with chili peppers sauce in combination with fennel à la julienne and avocado puree. Easy and super-tasty. Ready?

Here are ingredients for the 4-serving recipe:

 


4 fillets of fresh salmon (about 150 g each)
2 fennels
2 avocados
2 chili peppers 
4 teaspoons honey 
1 lemon fruit
EVO oil
salt and pepper

  1. Cut avocados in half and remove the pulp with a spoon
  2. Transfer it in a blender along with the juice of half a lemon and reduce it into a silky cream. Add salt and freshly ground pepper according to your taste
  3. Prepare the sauce: cut peppers into pieces, removing their seeds. In a small bowl, mix sliced ​​peppers with the remaining lemon juice, honey and 4 tablespoons of EVO oil. Add salt and mix well
  4. Cook the salmon fillets on a non-stick grill pan for about 4 minutes starting from the skin side 
  5. Meanwhile, cut fennels into thin slices, à la julienne, and place them on a flat plate with avocado puree on the side
  6. Turn the salmon, and cook until the meat begins to change color and becomes flaky. Adjust salt and pepper, season fillets and fennel with chilli sauce and serve immediately.
