Here are ingredients for a 4-serving recipe:


3 potatoes
250 g Provola cheese
250 g mixed pasta
100 g Parmigiano reggiano grated
4 cherry tomatoes
1/2 onion, peeled and chopped
1 carrot, peeled and chopped
2 sprigs celery, cut into rounds
500 ml water
EVO oil
salt and pepper

  1. Finely chop carrot, onion and celery and keep them aside
  2. Peel and chop the potatoes into small cubes
  3. Chop the Provola cheese as well
  4. Pour two tablespoons of EVO oil in a pan and, when it is hot, braise the vegetables
  5. Add potatoes and chopped cherry tomatoes to the pan
  6. Add half of the water and go on with the cooking for 30 minutes, covered by a lid
  7. Add pasta and the rest of the water, and go on with the cooking for about 15 minutes more
  8. Add Parmigiano reggiano and Provola cheese and stir to mix. Season with pepper according to your taste
