Carrots and hazelnuts cake

Carrots and hazelnuts cake. A delicious, healthy and mysterious cake. At the first morsel, but also at the second, no one could understand its main ingredients, which was the spice I put in.
This sweet indeed conveys a very special set of flavors, while its dough consistency is  crispy and fluffy at the same time...impossible to guess, impossible to forget!

Moreover, who does not have carrots at home? This wonderful vegetable, with its versatility, is too "essential" not to keep it in the kitchen for any use. If you want to try this recipe, you'd just need to sacrifice some carrots and add a little of hazelnuts: you will have in no time and with no effort a cake perfect for any time of day!


Here are ingredients for a 12-serving recipe (24-cm diameter baking pan):


300 g carrots
250 g toasted hazelnuts
240 g sugar
100 g flour 00
1 sachet vanilla baking powder
6 eggs
1 organic orange

  1. Preheat oven to 180°
  2. Coarsely chop up the hazelnuts
  3. Peel and finely grate carrots
  4. Beat egg yolks with sugar until the mixture is puffy
  5. Gradually incorporate crushed hazelnuts, sifted flour and baking powder. Mix well with an electric beater until smooth
  6. Beat the egg whites until stiff
  7. Squeeze grated carrots to drain. Wash and grate the orange zest
  8. Incorporate egg whites, carrots and orange zest to the mixture. Mix gently with a spoon
  9. Grease and flour the baking pan, pour and level the mixture. Bake the cake at 180° for 40 minute. (Do not open the oven for at least the first half of the baking time and perform the toothpick test at the end, to be sure baking is done)
  10. Leave the cake to cool a bit in the oven with the door open, then out of the oven. Garnish the top with some icing sugar, if you like
